Salmon en Papillote

Ingredients:

  • 2 salmon filets
  • 1 zucchini, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • 1 lemon
  • Parsley 
  • Avocado Oil
  • White wine
  • Salt and pepper
  • Garlic, freshly minced
  • Parchment paper

Instructions: 

  1.  Prepare. Preheat your oven to 400°F (200°C). Cut two large pieces of parchment paper, about 12-14 inches long. Fold each piece in half to create a crease, then open them back up.
  2. Layer. On one side of each parchment piece, layer the zucchini, bell pepper, and red onion. Drizzle with avocado oil and season with salt, pepper, and minced garlic. Place a salmon filet on top of the vegetables. Squeeze some lemon juice over the fish with a splash of white wine. Season with salt, pepper, and more garlic. Finish with a couple of lemon slices and chopped parsley. 
  3. Seal. Fold the parchment over the salmon and vegetables to create a sealed packet. Start at one end and make small folds, pinching tightly to seal. Leave some space inside for steam.
  4. Bake. Place the packets on a baking sheet and bake for about 15-20 minutes, depending on the thickness of the salmon. The fish should be cooked through and flake easily with a fork.
  5. Serve. Carefully open the packets (watch out for steam!) and serve directly in the parchment or on a plate. Enjoy your flavorful and healthy meal!
